Sundried Tomato Cauliflower Pasta

Ingredients:

  • 2 diced onions 

  • 2 tbls of coconut oil

  • 8 garlic cloves 

  • 2 tbls of cut up sundried tomatoes (not soaked in oil)

  • 1/2 cup of vegetable broth 

  • 2 packages of gf noodles (use one package if that is too much for you) 

  • 1 head of cauliflower cut up into bite size pieces 

  • 1/2 cup nutritional yeast (sari foods  brand) 

  • 1 tsp of salt and pepper mix (adjust to taste) 

  • 1-2 tsp of Italian seasoning 

  • 1 tsp of onion granules

Directions:

  1. In a sauce pan I put the coconut oil and onions and cook for about 5 minutes on high to get them browned. 

  2. Then add in the broth, sundried tomatoes, cauliflower, seasoning, garlic and cover for 10 minutes or so until the cauliflower is tender. 

  3. While this is happening cook the gf pasta in a pot. 

  4. Add cooked noodles to cauliflower pasta sauce and season noodles with salt and pepper before tossing together. Mix all together with the nutritional yeast😋
